Roasted Aubergine, Pepper and Pomegranate Salad

As there is actually some semblance of Summer here now I decided to do a light middle eastern inspired dinner with a delicious salad and some Lamb Kofe ( see seperate post). The sald was part inspired by some recipes I’d seen on the internet but also influenced by what was in my frifge and what i could get at the supermarket. Once I saw they had pomegranates  in stock i settled on this salad.

To begin with i cubed some aubergine and sprinkled with cumin, salt and olive oil and then roasted for about 40 minutes at 200c, at the same time i also put some peppers into roast.

 
To be fair it was pretty difficult not eating these straight away as they came out of the oven they smelled so good, but I was strong!

The roasted vegetables where left to cool then i assembeled the salad. I chopped some spring onions, baby tomatoes and also crubbled some feta, then i added a good handful of rocket and some chopped parsely.

When all this was combined in a bowl I added olive oil, lemon juice and salt and pepper and made sure all of the salad was coated before throwing in the pods of half a pomegranate.

Then i plated up and gave a last sprinkling of pomegranate and chopped parsley.

  

The salad was perfect with the koftas but would be equally good as a stand alone dish for lunch.
