Lamb Koftas 

In keeping with the low carb theme I decided to make some spicy lamb koftas. I always enjoy these when I eat out at Middle eastern restaurants or Kebab places so I thought I’d give them a go myself!

There are myriad recipes for koftas out there depending on where in the world they are made so my concoction of spices was based on what I had available in my spice box.

I started off with 400 g of lamb mince in a bowl then added half an onion , a large clove of garlic and a little fresh ginger, all of which I whizzed to a rough paste in a food processor.

For the spices I added hot paprika, cumin, coriander and chilli flakes as well as some chopped mint and plenty of salt and pepper.

  
Then I got my hands in and mixed well before placing in the fridge to allow the flavours to mingle and get to know each other( you know, infuse! ).

To cook I simply put the little patties in a hot frying pan ( they would also be great on a BBQ) and cooked until they were golden and a little charred and crispy.

I served with the Aubergine, pepper and pomegranate salad as well as a mint and yoghurt sauce and a spicy Harissa and lemon sauce.
