I’d invited some friends over to watch England play Ireland in the six nations ( let’s not dwell on the result!) and was cooking a Rib of Beef Roast, but the match was at three and we probably needed something to accompany the Guiness before we ate later.
The day before I saw Matt Tebbutt cooking these mozzarella slices on the TV and thought I’d give them a go http://www.foodnetwork.co.uk/recipes/fried-mozzarella-sandwich-tapenade.html . He served them with a tapenade but I thought they’d also be great with a homemade marinara sauce. I got the recipe for the sauce from here http://www.foodnetwork.com/recipes/ina-garten/marinara-sauce-recipe.html and made it ahead of time serving it at room temperature.
To make the slices you simply take some slices of white bread, remove the crusts and put a slice of mozzarella and a basil leaf between two slices and push the edges together to form a kind of bread ravioli. Then you simply put them through a bowl of milk, then flour and then egg and shallow fry till golden brown.
They turned out perfectly, great snacking food for the match!
And the sauce was a delicious accompaniment, I made a fairly big batch and froze some so will probably having that with some pasta soon.
