Indian Spiced Cornbread

I’ve had a bit of a busy week since my last post where I said I’d upload the details of the cornbread that I made to go with the Indian spiced fried chicken. But a friend at work said his wife was eagerly awaiting the details so I’ve pulled my finger out and got around to it!

It’ll be a short post as the I simply used this recipe http://www.bbcgoodfood.com/recipes/1899/quick-chilli-cornbread  and added my own blend of spice. 

The spices I added were fresh corriander, cumin, ground corriander, black onion seeds, chilli, garam massala and finely chopped onion.

The recipe makes a loose batter that simply needs pouring into a pan and baking.

  
The bread was really quite light and moist, and went really well with the chicken and sweetcorn curry. It was the first time I’d made cornbread but I can definitely see myself making it again as the neutral flavour will go really well with a range of flavourings. I think I’ll make a manchego and chorizo version next time.
