Two low carb recipes in a row! It must be summer soon! I had a friend come around for dinner tonight at short notice so I was freezer rummaging for ideas! As part of my health kick I had loads of veg and herbs in the freezer and plenty of fish in the freezer so I settled on Lime, Chilli and Ginger Squid with Courgette Sesame noodles! Cue chopped veg shot!
I haven’t got a spiralizer for the courgette so I cut thin strips lengthways. Then I wilted the strips in boiling water while I cooked the squid.
This was a fairly simple stir fry with red chilli, garlic, ginger, spring onions and peppers….. And obviously squid!
When it was cooked after a few minutes I added plenty of coriander, lime juice and a little soy sauce! Then I drained the courgette and tossed it with a little sesame oil and black sesame seeds.
Being a food geek I also garnished with a little fresh coriander, chilli and sesame seeds!
