Skate with Caper Butter

As a Mother’s Day treat I said I’d cook my mum some skate, her favourite fish. After a bit of searching I found two lovely wings.

I simply dusted them with a little seasoned flour and then fried them in butter and a little oil until they started to colour on both sides.

Then I removed the skate onto a warm plate, turned the heat off under the pan ( by this stage the butter was a little nutty and brown but not burnt) and added lemon juice, parsley and capers along with a grind of black pepper.  Then i just poured the sauce over the skate and served with some new potatoes and mange tout. It went particularly well with a cold glass of Albariño!
