Indian Spiced Polenta

I was cooking a new curry (more on that later) and hadn’t really got organised enough to buying anything for a starter, so a bit of larder raiding was called for!

A quick scan revealed a half used pack of polenta which i thought I’d make into a crunchy spicy appetiser.

It was quick cook polenta so only took about five minutes to get it to the correct consistency in a pan. I then dry roasted some spices , you can use whatever you like but I roasted cumin, coriander, mustard seeds, chilli, nigella seeds and then added powdered turmeric and garam masala.

Once the spices were added I took the pan off of the heat and threw in some fresh coriander and spring onions. Then I poured the mixture into a tray lined with cling film and put it bro the fridge to cool and set.

When set I removed the tray, cut the polenta into rectangles dipped them in milk and then rolled in uncooked polenta ( this is what gives the polenta it’s crispy outside) before frying in a pan.

When nice and crispy I served with fresh coriander, spring onions and a squeeze of lemon.
